A modern twist on a classic brunch favorite—this Air Fryer Eggs Benedict features perfectly poached eggs, crispy peameal bacon, and toasted English muffins, all topped with a rich, creamy homemade Hollandaise sauce.

Hollandaise Sauce:
- ½ cup heavy cream
- 4 large egg yolks
- 1½ tbsp lemon juice
- 1 tsp Dijon mustard optional
- 1 –2 pinches cayenne pepper optional
- ½ cup unsalted butter melted
- Salt and freshly ground black pepper
Eggs Benedict:
- 4 large eggs
- 2 English muffins
- 4 peameal bacon slices
In a heat-safe bowl over a simmering saucepan, whisk together cream, yolks, lemon juice, mustard, and cayenne.
Stir constantly until thickened and 160°F.
Slowly whisk in melted butter. Season with salt and pepper.
Cover and keep warm.
