A modern twist on a classic brunch favorite—this Air Fryer Eggs Benedict features perfectly poached eggs, crispy peameal bacon, and toasted English muffins, all topped with a rich, creamy homemade Hollandaise sauce.

Ingredients
  

Hollandaise Sauce:

  • ½ cup heavy cream
  • 4 large egg yolks
  • tbsp lemon juice
  • 1 tsp Dijon mustard optional
  • 1 –2 pinches cayenne pepper optional
  • ½ cup unsalted butter melted
  • Salt and freshly ground black pepper

Eggs Benedict:

  • 4 large eggs
  • 2 English muffins
  • 4 peameal bacon slices

Instructions
 

  • In a heat-safe bowl over a simmering saucepan, whisk together cream, yolks, lemon juice, mustard, and cayenne.
  • Stir constantly until thickened and 160°F.
  • Slowly whisk in melted butter. Season with salt and pepper.
  • Cover and keep warm.

Notes

  • For extra flavor, sprinkle paprika or fresh chives on top before serving.
  • If you don’t have ramekins, use silicone muffin cups in the air fryer.
  • You can substitute peameal bacon with Canadian bacon or cooked ham slices.
