–4 medium apples peeled, cored, and sliced

large eggs

granulated sugar

vanilla extract

all-purpose flour
Powdered sugar for dusting

Instructions
Preheat oven to 350°F. Grease and flour a 9-inch springform pan.
Peel and thinly slice the apples. Set aside.
In a large bowl, beat eggs and sugar 6–8 mins until thick and pale.
Add vanilla. Gently fold in sifted flour until combined.
Layer apples into the pan. Pour batter over.

Notes
For extra flavor, add a pinch of cinnamon or lemon zest to the batter.
Granny Smith or Honeycrisp apples hold their shape well during baking.
