Ingredients
  

  • 3 –4 medium apples peeled, cored, and sliced
  • 3 large eggs
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • Powdered sugar for dusting
  • Flour for pan

Instructions
 

  • Preheat oven to 350°F. Grease and flour a 9-inch springform pan.
  • Peel and thinly slice the apples. Set aside.
  • In a large bowl, beat eggs and sugar 6–8 mins until thick and pale.
  • Add vanilla. Gently fold in sifted flour until combined.
  • Layer apples into the pan. Pour batter over.

Notes

  • For extra flavor, add a pinch of cinnamon or lemon zest to the batter.
  • Granny Smith or Honeycrisp apples hold their shape well during baking.
