Ingredients
  

  • 4 large egg yolks
  • ½ cup 100g granulated sugar
  • 8 oz 225g mascarpone cheese
  • 24 Savoiardi Italian ladyfingers
  • cups espresso or strong brewed coffee cooled
  • 2 tbsp unsweetened cocoa powder

Instructions
 

  • In a bowl over simmering water, whisk egg yolks and sugar for 7–8 minutes. Let cool.
  • Fold mascarpone into the cooled egg mixture until smooth.
  • Dip each ladyfinger briefly in espresso. Arrange half in a 9×9 dish.
  • Spread half the mascarpone cream on top. Repeat layers.
  • Cover and refrigerate for 6–24 hours.
  • Dust with cocoa before serving.

Notes

  • Do not over-soak the ladyfingers or they will become soggy.
  • For extra depth, add a splash of coffee liqueur to the espresso.
  • Tiramisu tastes best after chilling overnight.
