- 4 very ripe bananas
- 65 g a little over ½ cup plain flour
- 3 tbsp sugar
- ½ tsp vanilla extract
- ¼ tsp nutmeg
- ¼ tsp ground cinnamon
- Pinch of salt
- 3¼ cups cooked white rice
- Cooking oil for frying
Peel and mash bananas in a bowl.
Add flour, sugar, vanilla, nutmeg, cinnamon, salt, and cooked rice.
Mix until batter forms.
Heat oil in a skillet over medium heat.
Scoop batter into hot oil and fry until golden brown on both sides, about 2–3 minutes each.
Drain on paper towels and serve warm.
