Ingredients
  

Crust:

  • 1 cup digestive biscuits crushed
  • ¼ cup unsalted butter melted

Pistachio Layer:

  • 1 cup shelled pistachios ground
  • ¼ cup confectioners’ sugar
  • ¼ cup heavy cream

Cream Cheese Layer:

  • 1 cup cream cheese softened
  • ½ cup confectioners’ sugar
  • 1 tsp vanilla extract

Blackberry Compote:

  • 2 cups fresh or thawed blackberries
  • ½ cup granulated sugar
  • 1 Tbsp lemon juice
  • 2 tsp cornstarch

Topping:

  • ¼ cup chopped pistachios
  • Fresh blackberries

Instructions
 

  • Crust: Mix biscuits + butter; press into an 8×8″ pan; chill 20 min.
  • Pistachio: Blend pistachios, sugar & cream; spread; chill 20 min.
  • Cream Cheese: Beat cheese, sugar & vanilla; spread; chill 30 min.
  • Compote: Cook berries, sugar, lemon & cornstarch until thick; cool; spread; chill 30 min.
  • Garnish: Top with nuts & berries; slice and serve.
