- ½ cup 1 stick unsalted butter
- 1 ½ cups heavy cream
- 2 tablespoons Cajun seasoning store-bought or homemade – see below
- ½ teaspoon kosher salt omit if Cajun blend contains salt
- 1 ¾ cups freshly grated Parmesan cheese
- Zest of 1 lemon
Homemade Cajun Seasoning (makes extra, store in a jar):
- 3 tablespoons smoked paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 2 teaspoons kosher salt
- 1 teaspoon white pepper
- 1 teaspoon ground mustard
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon cayenne pepper
- ½ teaspoon dried basil
In a large skillet over low heat, melt the butter until it begins to foam slightly.
Stir in the heavy cream and Cajun seasoning.
Add salt only if your seasoning blend is salt-free.
Bring to a gentle simmer and cook for 5–6 minutes, stirring occasionally.
Remove from heat and stir in lemon zest.
