Ingredients
  

Ingredients – Main Filling:

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • ½ onion finely diced
  • 1 bell pepper finely diced
  • 2 cloves garlic minced
  • 2 tbsp Cajun seasoning see below
  • 1 tbsp tomato paste
  • 1 cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar
  • Salt & black pepper to taste

Optional Toppings:

  • Sliced jalapeños
  • Pickles
  • Shredded cheese
  • Coleslaw

Burger Buns:

  • 4 –6 burger buns toasted with butter

Homemade Cajun Seasoning:

  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp thyme
  • ¼ tsp cayenne pepper
  • ¼ tsp black pepper

Instructions
 

  • Heat oil; sauté onion & pepper 5 min; add garlic 30 sec.
  • Brown chicken; add Cajun seasoning.
  • Stir in tomato paste, sauce, Worcestershire, sugar; simmer 10–15 min.
  • Season to taste.
  • Spoon onto buns; add toppings and serve.

Notes

  • Make it gluten-free by using GF buns and soy sauce instead of Worcestershire.
  • For extra heat, double the cayenne pepper in your Cajun mix or add hot sauce.
  • The filling also works great in lettuce wraps or spooned over baked potatoes!
