Ingredients
  

  • 2 cups rolled oats
  • cups grated carrots
  • 2 eggs
  • cups milk any kind
  • cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • teaspoons cinnamon
  • ¼ teaspoon ginger
  • 1 teaspoon baking powder
  • Pinch of salt
  • ½ cup raisins or chopped walnuts optional

Instructions
 

  • Preheat oven to 375°F. Grease or line an 8×8 baking dish.
  • Whisk eggs, milk, maple syrup, vanilla, and carrots in a large bowl.
  • Stir in oats, spices, baking powder, and salt. Fold in add-ins.
  • Pour into dish and bake 35–40 minutes until golden.
  • Cool 10 minutes before slicing. Serve warm or cold.

Notes

Use finely grated carrots so they blend seamlessly into the oats and bake evenly.
You can swap raisins for chopped dates or dried cranberries for a different twist.
