Ingredients
  

  • 1 lb fresh cherries pitted and halved
  • ¼ cup Amaretto liqueur
  • 1 tbsp sugar
  • 16 ladyfingers
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup brewed espresso cooled
  • Cocoa powder for dusting
  • Shaved dark chocolate optional

Instructions
 

  • Combine cherries, Amaretto, and sugar; rest 30 mins.
  • Whisk mascarpone, powdered sugar, and vanilla.
  • Whip cream and fold into mascarpone mix.
  • Dip 8 ladyfingers in espresso; layer in dish.
  • Add half of the mascarpone and cherries.

Notes

  • Fresh cherries work best, but you can substitute with thawed frozen cherries if needed.
  • For a non-alcoholic version, omit Amaretto and macerate cherries with extra sugar and lemon juice.
