- 2 boneless skinless chicken breasts thinly sliced
- 1½ tablespoons olive oil
- 1 teaspoon Cajun seasoning adjust to taste
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ¼ teaspoon ground black pepper
- 4 tablespoons butter
- 1½ cups heavy whipping cream
- 1 cup grated Parmesan cheese
- 3 cups cooked rice
Cook rice according to package directions; set aside.
Season both sides of chicken with Cajun seasoning, garlic powder, onion powder, paprika, and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear chicken for 3–4 minutes per side, until golden and cooked through.
Remove and set aside.
Wipe out excess oil from the pan. Add butter, melt, then stir in heavy cream.

You can substitute half-and-half for heavy cream to lighten the sauce slightly.
