Ingredients
  

  • 2 boneless skinless chicken breasts thinly sliced
  • tablespoons olive oil
  • 1 teaspoon Cajun seasoning adjust to taste
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper
  • 4 tablespoons butter
  • cups heavy whipping cream
  • 1 cup grated Parmesan cheese
  • 3 cups cooked rice

Instructions
 

  • Cook rice according to package directions; set aside.
  • Season both sides of chicken with Cajun seasoning, garlic powder, onion powder, paprika, and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken for 3–4 minutes per side, until golden and cooked through.
  • Remove and set aside.
  • Wipe out excess oil from the pan. Add butter, melt, then stir in heavy cream.

Notes

You can substitute half-and-half for heavy cream to lighten the sauce slightly.
Adjust Cajun seasoning depending on your spice preference.
Use shrimp instead of chicken for a delicious seafood twist.
