- 3 large eggs
- 1 tablespoon milk
- Salt and black pepper to taste
- 1 tablespoon butter
- 2 tablespoons finely diced white onion
- 1 ounce diced ham
- 2 tablespoons diced green bell pepper
- 2 tablespoons diced red bell pepper
- 1/2 cup shredded cheddar cheese
Beat eggs, milk, salt, and pepper with a fork. Set aside.
Melt butter in a 6″ skillet over medium heat. Cook onion for 3 minutes.
Add ham and peppers. Cook 3–5 minutes until tender.
Reduce heat to medium-low. Pour in egg mixture and cook for 2 minutes.
Lift edges to let uncooked eggs flow underneath.
