Ingredients
  

  • 3 large eggs
  • 1 tablespoon milk
  • Salt and black pepper to taste
  • 1 tablespoon butter
  • 2 tablespoons finely diced white onion
  • 1 ounce diced ham
  • 2 tablespoons diced green bell pepper
  • 2 tablespoons diced red bell pepper
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Beat eggs, milk, salt, and pepper with a fork. Set aside.
  • Melt butter in a 6″ skillet over medium heat. Cook onion for 3 minutes.
  • Add ham and peppers. Cook 3–5 minutes until tender.
  • Reduce heat to medium-low. Pour in egg mixture and cook for 2 minutes.
  • Lift edges to let uncooked eggs flow underneath.

Notes

  • You can substitute cheddar with Monterey Jack or pepper jack for variety.
  • Add chopped tomatoes or mushrooms for more texture and flavor.
