Ingredients
  

  • 1 ¼ cups fresh ricotta cheese
  • ½  + 2 tablespoons finely chopped pistachios plus extra for coating
  • 3 tablespoons pure honey plus more for drizzling
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: extra chopped pistachios edible flower petals, or a dusting of cocoa powder

Instructions
 

  • In a medium mixing bowl, combine ricotta cheese, pistachios, honey, vanilla extract, and a pinch of salt.
  • Stir until the mixture is smooth and evenly blended.
  • Taste the mixture and adjust sweetness if desired by adding a bit more honey.
  • Using your hands or a small cookie scoop, shape the mixture into small 1-inch balls.
  • Roll each ball in the reserved chopped pistachios to fully coat the outside.
  • Arrange the coated bites on a parchment-lined tray and chill in the refrigerator for 20–30 minutes, or until firm.
