Ingredients
  

RAMEN BROTH

  • 8 cups chicken broth reduced sodium
  • 1/4 cup light soy sauce
  • 1/4 cup mirin
  • 2 inch fresh ginger peeled & chopped
  • 3 –5 cloves garlic chopped
  • 4 green onions in 2-inch pieces
  • 1 stalk lemongrass optional
  • 1/2 –1 tsp red pepper flakes

GINGER GLAZED CHICKEN

  • 4 boneless skinless chicken thighs
  • 1/2 tsp black pepper
  • 2 Tbsp vegetable oil
  • 3 Tbsp light soy sauce
  • 1 Tbsp dark soy sauce
  • 3 Tbsp brown sugar
  • 2 tsp minced ginger
  • 1 tsp minced garlic

RAMEN

  • 8 oz shiitake mushrooms halved
  • 5 oz baby spinach
  • 1 Tbsp sesame oil
  • 12 oz ramen noodles
  • 3 green onions sliced

Instructions
 

  • Simmer broth ingredients for 15–20 min.
  • Sear seasoned chicken thighs in oil until golden.
  • Glaze chicken with soy, sugar, ginger, and garlic mix. Cook until sticky. Slice.
  • Strain broth and return to pot.
  • Add mushrooms (2–3 min), then spinach and sesame oil (3 min).
  • Boil noodles separately. Drain and divide into bowls.
