RAMEN BROTH
- 8 cups chicken broth reduced sodium
- 1/4 cup light soy sauce
- 1/4 cup mirin
- 2 inch fresh ginger peeled & chopped
- 3 –5 cloves garlic chopped
- 4 green onions in 2-inch pieces
- 1 stalk lemongrass optional
- 1/2 –1 tsp red pepper flakes
GINGER GLAZED CHICKEN
- 4 boneless skinless chicken thighs
- 1/2 tsp black pepper
- 2 Tbsp vegetable oil
- 3 Tbsp light soy sauce
- 1 Tbsp dark soy sauce
- 3 Tbsp brown sugar
- 2 tsp minced ginger
- 1 tsp minced garlic
RAMEN
- 8 oz shiitake mushrooms halved
- 5 oz baby spinach
- 1 Tbsp sesame oil
- 12 oz ramen noodles
- 3 green onions sliced
Simmer broth ingredients for 15–20 min.
Sear seasoned chicken thighs in oil until golden.
Glaze chicken with soy, sugar, ginger, and garlic mix. Cook until sticky. Slice.
Strain broth and return to pot.
Add mushrooms (2–3 min), then spinach and sesame oil (3 min).
Boil noodles separately. Drain and divide into bowls.
