- 1½ cups rolled oats
- ¾ cup almond flour
- ¼ cup melted coconut oil
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1½ cups chopped fresh strawberries
- 1 tbsp maple syrup for filling
- 1 tsp lemon juice
- 1 tbsp arrowroot powder or cornstarch
Preheat oven to 350°F and line 8×8 pan with parchment.
Mix oats, almond flour, oil, syrup, and vanilla. Reserve ⅓ for topping.
Press remaining crust into pan. Bake 10 minutes.
Mix strawberries, syrup, lemon juice, and starch. Spread over crust.
Crumble reserved topping. Bake 25–30 minutes more.

You can use frozen strawberries—just thaw and drain excess liquid before mixing.
