Ingredients
  

For the Lemon Oleo Saccharum:

  • Peels of 4–5 lemons only the yellow zest, no pith
  • 1 cup sugar adjust to match zest weight; about 3 tablespoons per lemon

For the Mocktail:

  • 1 –1.5 oz lemon oleo saccharum
  • 1 cup lemon sparkling water or non-alcoholic Prosecco
  • 1 oz fresh lemon juice optional
  • Ice cubes
  • Lemon slice or thyme sprig for garnish optional

Instructions
 

  • Make Oleо Saccharum (Day Before):
  • Rinse lemons and remove only the bright yellow zest.
  • Place zest in a clean, dry jar.
  • Add sugar and gently muddle.
  • Cover and let steep at room temperature for 8–12 hours.
  • Strain through a fine mesh strainer, pressing zest to extract all oil.
  • Discard zest and refrigerate syrup.

Notes
