- 1 lb chicken breast thinly sliced
- 1 cup mushrooms sliced
- 1 cup snow peas or bok choy
- 1 tsp cornstarch for marinade
- 2 cloves garlic minced
- 2 tbsp oil for stir-frying
- 1 tbsp oyster sauce
- 2 tbsp soy sauce
- ½ cup chicken broth
- 1 tsp cornstarch for slurry
- 1 tsp sesame oil
Marinate chicken in soy sauce and cornstarch for 10–15 mins.
Mix sauce ingredients in a bowl and set aside.
Stir-fry chicken in hot oil until browned, then remove.
Cook garlic and ginger, then stir-fry vegetables.
Return chicken to pan, pour in sauce, and cook until thickened.
Drizzle with sesame oil and serve hot.

You can swap snow peas for baby bok choy, broccoli, or bell peppers based on preference.
