Ingredients
  

  • 1 lb chicken breast thinly sliced
  • 1 cup mushrooms sliced
  • 1 cup snow peas or bok choy
  • 1 tsp cornstarch for marinade
  • 2 cloves garlic minced
  • 2 tbsp oil for stir-frying
  • 1 tbsp oyster sauce
  • 2 tbsp soy sauce
  • ½ cup chicken broth
  • 1 tsp cornstarch for slurry
  • 1 tsp sesame oil

Instructions
 

  • Marinate chicken in soy sauce and cornstarch for 10–15 mins.
  • Mix sauce ingredients in a bowl and set aside.
  • Stir-fry chicken in hot oil until browned, then remove.
  • Cook garlic and ginger, then stir-fry vegetables.
  • Return chicken to pan, pour in sauce, and cook until thickened.
  • Drizzle with sesame oil and serve hot.

Notes

You can swap snow peas for baby bok choy, broccoli, or bell peppers based on preference.
For extra umami, add a dash of Shaoxing wine or a few sliced water chestnuts.
To make it gluten-free, use tamari instead of soy sauce and a certified gluten-free oyster sauce.
