- 1 lb kielbasa sliced into rounds
- 1.5 lbs Yukon Gold potatoes cubed
- 1 small yellow onion sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried parsley optional
Preheat oven to 425°F.
Combine all ingredients in a large bowl and toss well.
Spread in a single layer on baking sheet.
Roast for 35–40 minutes, flipping once halfway.
