Ingredients
  

  • 1 lb kielbasa sliced into rounds
  • 1.5 lbs Yukon Gold potatoes cubed
  • 1 small yellow onion sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley optional

Instructions
 

  • Preheat oven to 425°F.
  • Combine all ingredients in a large bowl and toss well.
  • Spread in a single layer on baking sheet.
  • Roast for 35–40 minutes, flipping once halfway.
