Pear Vanilla Syrup
- 1 cup finely chopped or blended pears Bartlett pears recommended
- ½ cup organic sugar
- ½ cup water
- ¼ cup vanilla syrup
To Make One Cocktail
- 1½ oz gin
- 2 Tbsp pear-vanilla syrup
- ¾ cup soda water
- Crushed ice to top
In a small saucepan, combine pears, sugar, water, and vanilla syrup; stir over medium heat until sugar dissolves.
Bring to a boil, then simmer 5–8 minutes until amber and pears break down.
Strain syrup into a container, pressing solids to extract liquid; discard solids.
Cool to room temperature.
In an 8-oz glass, whisk gin and syrup.
Add soda water and crushed ice; stir gently.

Make the syrup in advance and store in the fridge for up to 1 week.

Soda water keeps this drink light, but tonic or sparkling pear cider also work beautifully.
