This Pickle Margarita is a tangy, salty, and spicy twist on the classic margarita—made with pickle juice, lime, jalapeño syrup, and a sparkling finish. Served with a chamoy + Tajín rim and gherkin pickle garnish, it’s the perfect party drink with a bold punch!

- ¾ cup pickle juice
- 1 oz non-alcoholic tequila or regular tequila
- 1 oz fresh lime juice
- ½ –1 oz jalapeño simple syrup optional
- Sparkling water to top
- Chamoy and Tajín for rimming
- Gherkin pickles for garnish
For Jalapeño Simple Syrup
- 1 cup water
- 1 cup sugar or allulose
- 1 –2 jalapeño peppers sliced
Make syrup: warm water, sweetener, and jalapeños until dissolved; strain and chill.
Rim glass: dip in chamoy, then Tajín; add ice.
Shake: combine pickle juice, tequila, lime, and syrup with ice; shake 20 sec.
Strain into glass; top with sparkling water and stir gently.
Garnish with gherkin pickles and serve immediately.
