Ingredients
  

  • ¾ cup pickle juice
  • 1 oz non-alcoholic tequila or regular tequila
  • 1 oz fresh lime juice
  • ½ –1 oz jalapeño simple syrup optional
  • Sparkling water to top
  • Chamoy and Tajín for rimming
  • Gherkin pickles for garnish

For Jalapeño Simple Syrup

  • 1 cup water
  • 1 cup sugar or allulose
  • 1 –2 jalapeño peppers sliced

Instructions
 

  • Make syrup: warm water, sweetener, and jalapeños until dissolved; strain and chill.
  • Rim glass: dip in chamoy, then Tajín; add ice.
  • Shake: combine pickle juice, tequila, lime, and syrup with ice; shake 20 sec.
  • Strain into glass; top with sparkling water and stir gently.
  • Garnish with gherkin pickles and serve immediately.

Notes

  • For a mocktail version, stick with non-alcoholic tequila and allulose sweetener.
  • Want it spicier? Use two jalapeños or add a dash of hot sauce to the shaker.
