Ingredients
  

For Salmon Burgers

  • 1 pound salmon fillet
  • 1/2 cup panko crumbs or paleo/W30/GF substitute
  • 1 egg
  • 2 green onions chopped
  • 1/2 poblano pepper seeded and chopped
  • 1 tablespoon fresh lemon or lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For Avocado Salsa

  • 1 large ripe avocado peeled, seeded, and chopped
  • 1/2 poblano pepper seeded and chopped
  • 2 green onions chopped
  • 1 tablespoon fresh lemon or lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
 

  • Skin and finely chop the salmon.
  • Add salmon, panko, egg, poblano, green onion, lemon/lime juice, salt, and pepper to a bowl.
  • Mix well.
  • Form mixture into patties.
  • Heat a grill pan or BBQ to medium-high.
  • Cook patties for about 4 minutes per side until cooked through.

Notes

  • You can use canned salmon in a pinch—just be sure to drain it well.
  • For more heat, add jalapeño or a dash of hot sauce to the salsa.
  • These burgers hold together best if chilled for 15 minutes before cooking.
