Beef & Broth:
- 2.5 lb Chuck Roast
- Kosher Salt & Black Pepper
- 1 tbsp Vegetable Oil
- 1 large Onion sliced
- 1 cup Red Wine
- 2 cups Low-Sodium Beef Broth
- 2 cloves Garlic smashed
- 1 Bay Leaf
- 6 slices Provolone Cheese
For the Rolls:
- 6 Sandwich Rolls
- 3 tbsp Butter
- ½ tsp Garlic Powder
- Fresh Parsley chopped
Pat roast dry and season. Sear in oil on both sides.
Transfer roast to slow cooker.
Sauté onions in skillet, add wine, reduce, then pour into cooker.
Add broth, garlic, and bay leaf. Cook on low 8 hrs or high 6 hrs.
Remove beef, shred. Strain juice for dipping.
Broil garlic butter rolls. Top with beef and cheese, broil to melt.
