For the Pizza Dough:
- 2 cups all-purpose unbleached flour
- ¾ cup warm water
- 1 teaspoon yeast
- 1 teaspoon salt
For the Garlic-Oil Sauce:
- 2 tablespoons olive oil
- 2 garlic cloves minced
- Pinch of salt
For the Chicken:
- 1 chicken breast diced
- 1 tablespoon crushed New Mexican chile
- ½ teaspoon chipotle powder optional
- ¼ teaspoon salt
- Freshly ground black pepper
- 1 tablespoon olive oil
For Topping:
- 1 cup pickled jalapeños
- 1 cup cubed mozzarella cheese

Mix yeast and warm water.
Stir in flour and salt, knead, and let dough rise for 30–90 minutes.
Combine garlic, olive oil, and salt in a bowl for sauce. Mash and set aside.
Toss diced chicken with chile, chipotle, salt, pepper, and oil. Sauté until cooked.
Roll out the dough thinly. Let it rest, then roll again.
Prebake 1–2 minutes at 400°F.
