Ingredients
  

For the Pizza Dough:

  • 2 cups all-purpose unbleached flour
  • ¾ cup warm water
  • 1 teaspoon yeast
  • 1 teaspoon salt

For the Garlic-Oil Sauce:

  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • Pinch of salt

For the Chicken:

  • 1 chicken breast diced
  • 1 tablespoon crushed New Mexican chile
  • ½ teaspoon chipotle powder optional
  • ¼ teaspoon salt
  • Freshly ground black pepper
  • 1 tablespoon olive oil

For Topping:

  • 1 cup pickled jalapeños
  • 1 cup cubed mozzarella cheese
  • Optional Garnishes:
  • Chopped cilantro
  • Crema
  • Extra pickled jalapeños

Instructions
 

  • Mix yeast and warm water.
  • Stir in flour and salt, knead, and let dough rise for 30–90 minutes.
  • Combine garlic, olive oil, and salt in a bowl for sauce. Mash and set aside.
  • Toss diced chicken with chile, chipotle, salt, pepper, and oil. Sauté until cooked.
  • Roll out the dough thinly. Let it rest, then roll again.
  • Prebake 1–2 minutes at 400°F.
