These Two-Person Raspberry Crumbles are sweet, tart, and topped with a golden oat crumble. Baked in individual ramekins, they’re perfect for a cozy dessert for two—best served warm and optionally with a scoop of vanilla ice cream.

Ingredients
  

Berry Mixture

  • cups fresh or frozen berries
  • 2 tbsp sugar
  • ½ tbsp cornstarch
  • Squeeze of lemon juice

Crumble Topping

  • 4 tbsp butter melted
  • ½ cup rolled oats
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ tsp baking powder
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F.
  • Mix berries with sugar, cornstarch, and lemon juice.
  • In a separate bowl, mix all crumble ingredients.
  • Press ⅔ of crumble into two ramekins. Bake 5 mins.
  • Top with berry mixture and remaining crumble.
  • Bake 7–10 mins until golden and bubbling.

Notes

  • Use any combination of berries—raspberries, blueberries, and blackberries all work well.
  • For added texture, mix chopped nuts into the crumble topping.
