Ingredients
  

  • 2 cups crimini mushrooms sliced
  • 2 cups broccoli florets
  • 1 cup baby corn
  • 1 bell pepper sliced
  • 1 cup snow peas
  • 1 zucchini sliced
  • 1 large carrot sliced
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1/3 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch

Instructions
 

  • Whisk together sauce ingredients in a small bowl.
  • Heat oil in a large wok or skillet over medium-high heat.
  • Stir fry firm veggies (carrots, broccoli) for 2–3 minutes.
  • Add mushrooms, baby corn, and bell peppers. Stir fry 2–3 minutes.
  • Add snow peas and zucchini. Cook 1–2 minutes.

Notes

  • Feel free to swap in your favorite seasonal veggies.
