For the Whipped Feta:
- 8 oz 225 g feta cheese, crumbled
- 4 oz 115 g cream cheese, softened
- 1 –2 tablespoons olive oil
- 1 tablespoon lemon juice
- Freshly ground black pepper to taste
For the Roasted Strawberries:
- 1 pint 2 cups fresh strawberries, hulled and halved
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- Freshly ground black pepper to taste
Garnish:
- Fresh basil or mint leaves chopped
- Additional olive oil for drizzling
- Black sesame seeds optional
Preheat oven to 375°F (190°C).
Toss strawberries with balsamic vinegar, honey, and pepper.
Spread on parchment-lined sheet.
Roast for 15–20 minutes until soft and slightly caramelized. Let cool.
In a food processor, blend feta, cream cheese, olive oil, lemon juice, and pepper until smooth.
Spread whipped feta on a serving plate. Top with roasted strawberries.
