Ingredients
  

  • 4 large eggs
  • 2 Tbsp milk or cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup diced vegetables bell pepper, spinach, mushrooms
  • ¼ cup shredded cheese plus 1 Tbsp reserved

Instructions
 

  • Preheat air fryer to 350°F for 3–5 minutes.
  • Whisk eggs, milk, salt, and pepper until frothy.
  • Fold in veggies and most of the cheese.
  • Pour into greased 6″–7″ pan; top with reserved cheese.
  • Air fry 12–14 minutes until set and lightly golden.
  • Rest 2 minutes; slice into wedges and serve.
