- 4 large eggs
- 2 Tbsp milk or cream
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup diced vegetables bell pepper, spinach, mushrooms
- ¼ cup shredded cheese plus 1 Tbsp reserved
Preheat air fryer to 350°F for 3–5 minutes.
Whisk eggs, milk, salt, and pepper until frothy.
Fold in veggies and most of the cheese.
Pour into greased 6″–7″ pan; top with reserved cheese.
Air fry 12–14 minutes until set and lightly golden.
Rest 2 minutes; slice into wedges and serve.
