- 3 cups old-fashioned rolled oats
- 2 –3 large apples Honeycrisp or Gala, peeled and diced
- 2½ cups milk dairy or non-dairy
- 2 large eggs
- ½ cup brown sugar or maple syrup/coconut sugar
- 1½ tsp baking powder
- 2 tsp cinnamon
- ¼ tsp nutmeg
- ¾ tsp salt
- 1 tsp vanilla extract
- 4 tbsp melted butter or coconut oil
- Optional: ½ cup chopped walnuts or pecans ½ cup raisins or dried cranberries
Preheat oven to 325°F. Grease a 9×13″ (or 9×9″) baking dish.
In a large bowl, whisk oats, baking powder, cinnamon, nutmeg, salt, and sugar.
In another bowl, whisk milk, eggs, and vanilla.
Combine wet and dry ingredients, then stir in melted butter.
Layer diced apples in the baking dish. Pour oatmeal mixture over.
Bake for 35–45 minutes, until golden and set.
