Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 2 –3 large apples Honeycrisp or Gala, peeled and diced
  • cups milk dairy or non-dairy
  • 2 large eggs
  • ½ cup brown sugar or maple syrup/coconut sugar
  • tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ¾ tsp salt
  • 1 tsp vanilla extract
  • 4 tbsp melted butter or coconut oil
  • Optional: ½ cup chopped walnuts or pecans ½ cup raisins or dried cranberries

Instructions
 

  • Preheat oven to 325°F. Grease a 9×13″ (or 9×9″) baking dish.
  • In a large bowl, whisk oats, baking powder, cinnamon, nutmeg, salt, and sugar.
  • In another bowl, whisk milk, eggs, and vanilla.
  • Combine wet and dry ingredients, then stir in melted butter.
  • Layer diced apples in the baking dish. Pour oatmeal mixture over.
  • Bake for 35–45 minutes, until golden and set.
