Ingredients
  

  • 7 oz box of fully cooked sausage links
  • 5 large eggs
  • Salt and freshly ground black pepper
  • cups shredded cheese your favorite kind
  • 10 white corn tortillas or 6-inch flour tortillas

Instructions
 

  • In a skillet over medium-high heat, cook sausage links until warmed through.
  • Remove and set aside.
  • Whisk eggs with a splash of water or milk.
  • Add to skillet, season with salt and pepper, and scramble until just set.
  • Remove from heat.
  • Warm tortillas on a skillet or griddle for a few seconds until pliable.

Notes

  • Feel free to use any kind of cheese you prefer, such as cheddar, Monterey Jack, or a Mexican cheese blend.
