  • 1 cup rolled oats
  • 1 cup fresh blueberries
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  • Blend or whisk cottage cheese, oats, eggs, sweetener, vanilla, and cinnamon until smooth.
  • Fold in blueberries.
  • Pour mixture into baking dish and spread evenly.
  • Bake 25–30 minutes until golden and set.

Notes
