Ingredients
  

  • 2 cups salsa
  • 1 cup water
  • 3 cups white quick-cook rice
  • 8 oz cheddar cheese shredded
  • 1 can 16 oz refried beans
  • 8 large burrito-sized flour tortillas

Instructions
 

  • In a medium pot, bring salsa and water to a boil.
  • Stir in the rice, cover with lid, and turn off heat. Let it rest 5 minutes.
  • Shred cheese and warm refried beans in a pot over medium heat.
  • Heat tortillas in the microwave for 30 seconds.
  • Fluff rice with a fork.
  • Spread beans onto each tortilla, add rice, and sprinkle with cheese.
