Roasted Tomatoes
- 10 oz cherry or grape tomatoes halved
- 2 tbsp olive oil
- 3 cloves garlic minced
- Salt & pepper
Chicken Pasta
- 1.5 lb boneless skinless chicken breasts 2 large
- ¼ tsp salt
- 2 tsp smoked paprika
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- ½ lemon thinly sliced (preferably Meyer lemon)
- 4 cloves garlic minced
- 4 tbsp butter
- 8 oz spaghetti
- 8 oz burrata cheese
Garnish
- ½ cup fresh basil chopped
- ⅓ cup pine nuts toasted
Roast tomatoes at 400°F for 20 mins with oil, garlic, salt, and pepper.
Slice chicken in half, season, and cook 5 mins/side. Slice and set aside.
In same skillet, cook lemon, garlic, and butter for 2–3 mins. Remove from heat.
Cook spaghetti, drain, and toss with lemon butter sauce. Remove lemon slices.
Top with sliced chicken, roasted tomatoes, torn burrata, basil, and pine nuts.
