Ingredients
  

Roasted Tomatoes

  • 10 oz cherry or grape tomatoes halved
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • Salt & pepper

Chicken Pasta

  • 1.5 lb boneless skinless chicken breasts 2 large
  • ¼ tsp salt
  • 2 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • ½ lemon thinly sliced (preferably Meyer lemon)
  • 4 cloves garlic minced
  • 4 tbsp butter
  • 8 oz spaghetti
  • 8 oz burrata cheese

Garnish

  • ½ cup fresh basil chopped
  • cup pine nuts toasted

Instructions
 

  • Roast tomatoes at 400°F for 20 mins with oil, garlic, salt, and pepper.
  • Slice chicken in half, season, and cook 5 mins/side. Slice and set aside.
  • In same skillet, cook lemon, garlic, and butter for 2–3 mins. Remove from heat.
  • Cook spaghetti, drain, and toss with lemon butter sauce. Remove lemon slices.
  • Top with sliced chicken, roasted tomatoes, torn burrata, basil, and pine nuts.

Notes

  • Meyer lemons add a sweet citrus flavor, but regular lemons work too.
  • Use freshly toasted pine nuts for the best texture and nutty aroma.
  • For a vegetarian version, skip the chicken and double the tomatoes.
