- 10 oz about 2 cups pitted fresh or thawed frozen organic cherries
- ¼ cup coconut water or filtered water
- 1 cup raw cream or organic whipping cream
- 1 teaspoon organic vanilla extract
- 3 –4 tablespoons raw light-colored honey
Chill a large mixing bowl in the fridge for a few hours or overnight.
If using frozen cherries, thaw them first.
Blend cherries with coconut water until smooth. Set aside.
Remove the chilled bowl and whip the cream, honey, and vanilla:
Low speed for 30 seconds, then medium for 1–1½ minutes, until thick and fluffy.
Layer whipped cream and cherry puree alternately into popsicle molds. Tap gently to settle.
