- 1 ¼ lb boneless skinless chicken breasts
- 6 ½ cups chicken broth
- 2 medium carrots thinly sliced
- 2 celery stalks thinly sliced
- 1 small onion finely diced
- 2 garlic cloves minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- 2 ¼ cups egg noodles
- Chopped fresh parsley for garnish
Place the chicken, broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper into the Crockpot.
Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is tender and fully cooked.
Remove the chicken and shred it using two forks.
Return the shredded chicken to the pot.
Stir in the egg noodles and cook on high for an additional 20–30 minutes, until the noodles are tender.
