Ingredients
  

  • 1 ¼ lb boneless skinless chicken breasts
  • 6 ½ cups chicken broth
  • 2 medium carrots thinly sliced
  • 2 celery stalks thinly sliced
  • 1 small onion finely diced
  • 2 garlic cloves minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 ¼ cups egg noodles
  • Chopped fresh parsley for garnish

Instructions
 

  • Place the chicken, broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper into the Crockpot.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is tender and fully cooked.
  • Remove the chicken and shred it using two forks.
  • Return the shredded chicken to the pot.
  • Stir in the egg noodles and cook on high for an additional 20–30 minutes, until the noodles are tender.

Notes

You can substitute chicken thighs for a richer flavor.
Add a splash of lemon juice at the end for brightness.
