This tiramisu swaps out traditional coffee for a fragrant Earl Grey tea syrup, bringing a soft floral-citrus aroma that pairs beautifully with the silky mascarpone and delicate ladyfingers. It’s light, airy, and perfect for tea time or after dinner.

- 250 g mascarpone
- 2 eggs
- 50 g sugar + 2 tsp
- 100 g savoiardi ladyfinger biscuits
- 2 tsp loose leaf Earl Grey tea
- 160 ml water
Add tea and 2 tsp sugar to freshly boiled water.
Stir and steep for 20 minutes. Strain and discard tea leaves. Let cool.
Separate egg yolks and whites into two bowls.
Beat the whites with half the sugar until stiff peaks form.
Beat the yolks with the remaining sugar until pale and fluffy.
Add mascarpone and mix until smooth. Fold in the beaten egg whites.
Spread a thin layer of mascarpone cream at the bottom of a dish.
