Ingredients
  

  • 15 oz ricotta cheese drained
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • 4 large eggs
  • 1/2 cup cooked fresh parsley chopped and squeezed dry
  • 1/2 cup diced prosciutto
  • 1/2 cup diced salami
  • 1/2 cup diced ham
  • 1/2 tsp black pepper
  • 2 pie crusts store-bought or homemade
  • 1 egg beaten (for egg wash)

Instructions
 

  • Preheat oven to 375°F. Line pie dish with one crust.
  • Mix cheeses, eggs, spinach, and meats in a bowl. Season.
  • Fill crust with mixture. Top with second crust. Seal edges and cut vents.
  • Brush with egg wash. Bake 45–55 minutes until golden.
  • Cool 30 minutes before slicing.

Notes

  • Be sure to drain the ricotta well to prevent a watery filling.
