Ingredients
  

  • 1 lb steak sirloin or ribeye, cut into cubes
  • 1.5 lb baby potatoes
  • 2 tbsp olive oil divided
  • 2 tbsp butter
  • 3 –4 garlic cloves minced
  • 1 cup shredded cheese mozzarella or cheddar
  • Salt and pepper to taste

Instructions
 

  • Boil potatoes until fork tender. Drain and let cool.
  • Smash potatoes on baking sheet, drizzle with oil, season, and bake at 425°F for 20–25 mins.
  • Sprinkle cheese on potatoes and broil until melted.
  • Sear seasoned steak in a hot skillet until browned. Remove.
  • Add butter and garlic to skillet, cook until fragrant.
  • Return steak and toss.

Notes

  • Make sure not to overcrowd the skillet when searing steak to get a good sear.
  • Swap in Yukon gold or red potatoes for extra creaminess.
