Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 2 sandwich buns brioche or other
  • Lettuce tomato slices, avocado, onion
  • Mayo or sauce of choice optional

Instructions
 

  • Whisk marinade ingredients and coat chicken. Refrigerate 30 mins–2 hrs.
  • Grill chicken 5–6 mins per side until internal temp hits 165°F. Rest.
  • Toast buns while chicken rests.
  • Assemble sandwiches with mayo, veggies, grilled chicken, and bun tops.
