Ingredients

  • lb sweet potatoes diced 1″
  • 3 Tbsp avocado oil
  • 1 Tbsp all-purpose seasoning salt
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • ¼ cup Parmesan grated

For the Sloppy Joe Sauce:

  • lb lean ground beef
  • cups ketchup
  • ¼ cup water
  • 2 Tbsp sugar
  • 1 Tbsp mustard
  • ½ tsp white vinegar
  • ½ tsp paprika
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Toppings (optional):

  • pickled red onions
  • pickles
  • sliced jalapeños
  • chopped chives or green onions

Instructions
 

  • Preheat oven to 400°F with sheet inside.
  • Toss potatoes with oil, seasonings, and cheese.
  • Spray hot sheet; spread potatoes; roast 20–25 min, stirring halfway.
  • Cook beef in oil, breaking up until no pink; drain.
  • Add sauce ingredients; simmer 5 min.
  • Divide potatoes and beef sauce into bowls; top with desired toppings. Serve hot.
