- 2½ lb sweet potatoes diced 1″
- 3 Tbsp avocado oil
- 1 Tbsp all-purpose seasoning salt
- 1 tsp dried parsley
- ½ tsp black pepper
- ¼ cup Parmesan grated
For the Sloppy Joe Sauce:
- 1½ lb lean ground beef
- 1¼ cups ketchup
- ¼ cup water
- 2 Tbsp sugar
- 1 Tbsp mustard
- ½ tsp white vinegar
- ½ tsp paprika
- ½ tsp kosher salt
- ¼ tsp black pepper
Toppings (optional):
- pickled red onions
- pickles
- sliced jalapeños
- chopped chives or green onions
Preheat oven to 400°F with sheet inside.
Toss potatoes with oil, seasonings, and cheese.
Spray hot sheet; spread potatoes; roast 20–25 min, stirring halfway.
Cook beef in oil, breaking up until no pink; drain.
Add sauce ingredients; simmer 5 min.
Divide potatoes and beef sauce into bowls; top with desired toppings. Serve hot.
