Ingredients
  

  • 8 oz egg noodles or chow mein noodles
  • 2 tbsp neutral oil plus more as needed
  • 2 cloves garlic minced
  • 2 cups mixed vegetables bok choy, carrots, mushrooms, etc.
  • 2 tbsp soy sauce
  • ¼ cup water

Instructions
 

  • Boil noodles until just tender. Drain and dry slightly.
  • Pan-fry noodles until golden and crispy on both sides. Set aside.
  • Stir-fry garlic, ginger, and vegetables.
  • Mix soy sauce, oyster sauce, cornstarch, and water. Add to pan.
  • Cook until thickened. Pour over noodles and serve.

Notes

For extra flavor, add a splash of sesame oil or a pinch of chili flakes to the sauce.
Use any combination of vegetables—snap peas, bell peppers, or cabbage work great.
To make it a full meal, top with grilled tofu, shrimp, or sliced chicken.
