Ingredients
  

  • 2 pie crusts for top and bottom
  • 2 cups ricotta cheese drained if watery
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • cups chopped Italian meats ham, salami, prosciutto
  • 3 large eggs
  • ¼ cup chopped parsley optional
  • 1 egg for egg wash

Instructions
 

  • Preheat oven to 350°F. Roll out bottom crust and place in pie pan.
  • In a bowl, mix ricotta, mozzarella, parmesan, meats, eggs, parsley, and pepper.
  • Fill pie shell with mixture. Top with second crust. Seal edges and cut steam slits.
  • Brush with egg wash. Bake 60–75 minutes until golden.
  • Cool before slicing and enjoy warm or cold.

Notes

Drain the ricotta cheese well to avoid a soggy filling.
