- 2 pie crusts for top and bottom
- 2 cups ricotta cheese drained if watery
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1½ cups chopped Italian meats ham, salami, prosciutto
- 3 large eggs
- ¼ cup chopped parsley optional
- 1 egg for egg wash
Preheat oven to 350°F. Roll out bottom crust and place in pie pan.
In a bowl, mix ricotta, mozzarella, parmesan, meats, eggs, parsley, and pepper.
Fill pie shell with mixture. Top with second crust. Seal edges and cut steam slits.
