Ingredients
  

  • 16 oz ricotta cheese drained
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • 4 large eggs
  • 1/2 cup diced prosciutto
  • 1/2 cup diced salami
  • 4 ounces milk ½ cup any variety
  • 1/2 tsp ground black pepper
  • 2 pie crusts store-bought or homemade
  • 1 egg beaten (for egg wash)

Instructions
 

  • Preheat oven to 350°F. Line springform pan with bottom crust.
  • Combine cheeses, meats, eggs, and pepper in large bowl.
  • Fill crust with mixture, top with second crust, seal and vent.
  • Brush with egg wash. Bake 60–75 minutes until golden.
  • Cool at least 30 minutes before slicing. Serve warm or chilled.

Notes

  • Draining ricotta well ensures a firm, non-watery filling.
