Ingredients
  

  • 2 cups 240g all-purpose flour
  • 1 tbsp 12g baking powder
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp cayenne pepper optional
  • 1 cup 100g shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup 240ml whole milk
  • ¼ cup 60ml olive oil
  • 2 large eggs
  • 1 cup 140g chopped pitted olives (green, black, or mixed)
  • 1 tbsp fresh thyme leaves or 1 tsp dried thyme optional
  • tbsp melted butter or non-stick spray for loaf pan

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9×5″ loaf pan.
  • Whisk dry ingredients in a large bowl.
  • Whisk wet ingredients in another bowl.
  • Gently fold wet ingredients into dry—don’t overmix.
  • Fold in cheese, olives, and thyme.
  • Pour batter into loaf pan, smooth the top.

Notes

Use a blend of cheddar and mozzarella for extra flavor and melt.
