- 1 tbsp 12g baking powder
- ½ tsp salt
- ½ tsp ground black pepper
- ¼ tsp cayenne pepper optional
- 1 cup 100g shredded cheese (cheddar, mozzarella, or a blend)
- 1 cup 240ml whole milk
- ¼ cup 60ml olive oil
- 2 large eggs
- 1 cup 140g chopped pitted olives (green, black, or mixed)
- 1 tbsp fresh thyme leaves or 1 tsp dried thyme optional
- 1½ tbsp melted butter or non-stick spray for loaf pan
Preheat oven to 375°F (190°C). Grease a 9×5″ loaf pan.
Whisk dry ingredients in a large bowl.
Whisk wet ingredients in another bowl.
Gently fold wet ingredients into dry—don’t overmix.
Fold in cheese, olives, and thyme.
Pour batter into loaf pan, smooth the top.
