Ingredients
  

For the Peanut Butter Mousse

  • 350 grams silken tofu
  • 3 –4 tbsp smooth peanut butter to taste
  • 3 –4 tbsp agave syrup or maple syrup or powdered sugar, to taste
  • 1 tsp vanilla paste or extract
  • 1 pinch salt

For the Chocolate Ganache

  • 100 grams 70% dark chocolate chips or chopped chocolate
  • 400 g can full-fat coconut milk – only the creamy part on top chilled

Instructions
 

  • Add silken tofu, peanut butter, syrup, vanilla, and salt to a blender.
  • Blend until smooth and creamy.
  • Taste and adjust as needed.
  • Spoon into jars or ramekins.
  • Cover and chill.
  • Melt chocolate gently in microwave or double boiler.

Notes

  • Silken Tofu: Look for “silken” or “soft” tofu labeled as shelf-stable or refrigerated; drain briefly but don’t overpress or you’ll lose its moisture.
  • Sweetness: Adjust the agave or maple syrup to your taste. You can substitute powdered sugar, but add it gradually to avoid graininess.
