Juicy “smash” beef patties cooked right on warm tortillas, layered with American cheese, tangy mayo-ketchup relish, sautéed onions, pickles, tomato, and shredded romaine. All the flavor of a classic burger, handheld taco-style!

For the Spread:
- ⅓ cup mayonnaise
- 3 tbsp ketchup
- 2 tbsp sweet pickle relish
- 2 tbsp minced red onion
- 1 tbsp white vinegar
- ½ tsp granulated sugar
For Assembly & Serving:
- 8 small flour tortillas
- ¾ lb ground beef 80/20
- 1 tbsp yellow mustard
- Kosher salt & black pepper to taste
- 8 slices American cheese
- 1 medium yellow onion diced
- Sliced dill pickles
- 1 small Campari tomato sliced
- 1 romaine heart shredded
Mix all spread ingredients in a bowl and refrigerate.
Press beef evenly onto tortillas, spread with mustard, season with salt and pepper.
Heat a skillet. Cook tortillas beef-side down, smashing flat.
Flip, warm tortilla briefly, transfer to plate, and top with cheese.
Sauté diced onion in skillet until golden.
