This sparkling lavender coconut lemonade mocktail is floral, fizzy, and ultra-refreshing. Infused with coconut water, honey, fresh lemon juice, and delicate lavender, it’s the perfect cooler for summer days, brunch gatherings, or garden parties.

- 2 cups fresh lemon juice
- 4 cups infused coconut water
- 1/4 cup dried lavender or 1/2 cup fresh lavender
- 1/2 cup honey or agave syrup adjust to taste
- 4 cups sparkling water
- Ice cubes
- Lemon slices and lavender sprigs for garnish
Combine coconut water and lavender in saucepan.
Heat 10 mins, then steep 10 mins. Strain and cool.
Mix with lemon juice and honey/agave in pitcher.
Add sparkling water just before serving. Taste and adjust.
Pour over ice. Garnish with lemon slices and lavender.
