Ingredients
  

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 onion chopped
  • 2 medium carrots sliced
  • 2 celery stalks sliced
  • 2 garlic cloves minced
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 1 1/2 cups egg noodles
  • 2 cups cooked shredded chicken
  • Fresh parsley for garnish optional

Instructions
 

  • Heat oil and butter in a pot. Sauté onion, carrot, and celery for 5–6 mins.
  • Add garlic, thyme, bay leaf, salt, and pepper. Stir 1 minute.
  • Pour in chicken broth. Simmer 10 minutes.
  • Stir in noodles. Cook until tender.
  • Add shredded chicken. Simmer 5 minutes.

Notes

    • You can use rotisserie chicken for a quicker prep.
    • Add more broth if reheating, as noodles may absorb liquid over time.
