- 1 tbsp olive oil
- 1 tbsp butter
- 1/2 onion chopped
- 2 medium carrots sliced
- 2 celery stalks sliced
- 2 garlic cloves minced
- 1/2 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 6 cups chicken broth
- 1 1/2 cups egg noodles
- 2 cups cooked shredded chicken
- Fresh parsley for garnish optional
Heat oil and butter in a pot. Sauté onion, carrot, and celery for 5–6 mins.
Add garlic, thyme, bay leaf, salt, and pepper. Stir 1 minute.
Pour in chicken broth. Simmer 10 minutes.
Stir in noodles. Cook until tender.
Add shredded chicken. Simmer 5 minutes.
