Ingredients
  

  • 2 cups steel-cut oats
  • 2 eggs
  • 2 cups milk of choice
  • 2 ripe bananas sliced
  • 1/2 cup peanut butter warmed
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Dash of salt
  • Optional: 1/3 cup mini chocolate chips

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a casserole dish.
  • In a large bowl, mix oats, eggs, milk, cinnamon, nutmeg, vanilla, baking powder, and salt.
  • Layer one sliced banana on the bottom of the dish.
  • Pour the oatmeal mixture over the banana layer.
  • Layer the second sliced banana on top.
  • Swirl in warmed peanut butter.
