- 2 cups steel-cut oats
- 2 eggs
- 2 cups milk of choice
- 2 ripe bananas sliced
- 1/2 cup peanut butter warmed
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp vanilla extract
- 1 tsp baking powder
- Dash of salt
- Optional: 1/3 cup mini chocolate chips
Preheat oven to 375°F (190°C) and grease a casserole dish.
In a large bowl, mix oats, eggs, milk, cinnamon, nutmeg, vanilla, baking powder, and salt.
Layer one sliced banana on the bottom of the dish.
Pour the oatmeal mixture over the banana layer.
Layer the second sliced banana on top.
